Maple Orange Chicken with sweet potatoe and butternut squash

Chicken breast tenders
1 acorn squash cut and seeded
2 sweet potatoes peeled and cut
1/4 cup maple syrup
2 TBL Hoisin sauce
3TBL butter
Juice of 2 oranges
Thyme (a quarter sized amount in my palm?)
Nutmeg
salt and pepper


Throw it all in a crockpot. Set it on High for four hours, come back later and YUM!

The kids ate this, they really liked it. Which probably really isn't a big surprise considering how much maple syrup is in it.

was it just mushy or was there still consistency to the squash and sweet potates.

also was it just a literal pinch of nutmeg?

ALso what did you serve it with???

The potatoes and squash still has substance. But If that is what you wanted, I would not use anything other than the chicken tenders, because they will cook before things go mushy. However, I had considered that it would taste as good if I mashed the potatoes with cream and served them that way...

I served it with broccoli, a salad, and biscuits that I premake and store in the freezer. I try to offer a lot of side options so the kids can pick, but still get all their nutrients.

Oh and yeah, I sprinkled the nutmeg onto it, I would guess it was about 3 tsp. In the crockpot I tend to use more spices because they kinda "cook out"
