Gingered Black eyed peas
2 cups dried Black eyed peas rinsed and drained
1/2 cup onion chopped
2 strips of bacon chopped
1 tsp deli mustard
1 TBL molasses
3/4 cup honey
tsp powdered ginger
salt and pepper to taste
- Put beans in a pot and cover with water. I think I used close to 3 cups of water.
- Add all the other ingredients, cover and simmer about an hour, adding water if you need to during the cooking process.
