Cajun Bourbon Chicken

Marinade:
1 cup Bourbon
1 cup soy sauce
1/2 cup brown sugar
1 tsp paprika
pinch hot red pepper flakes
1 TBL Molasses
3 cloves garlic, smashed
2 TBL onion and garlic powder

Combine ingredients into a marinade, (you can process it in a blender if you like). Set aside 1/2 cup into a clean jar to use for basting the chicken during grilling.

In a ziploc Bag, throw the chicken and the marinade. Let it marinate for 6-12 hours,
turning occasionally.

Allow chicken to sit at room temperature while grill heats up and season chicken with salt and pepper. Set heat to medium/high. Grill for for five minutes, then reduce heat to low and continue cooking for 15 minutes, basting with fresh marinade every few minutes.

Ah this really really sounds good. Since I'm back to grilling I'll have to try this though I suppose I'll have to leave out the bourbon until the new kiddo is out and about. Thanks for a another good recipe!

Rob its wonderful. You should be okay with the bourbon, the alcohol in it cooks off during the grilling so it won't have any punch left, just the remaining flavor. I serve it to the children with no problems.
