Black eyed Peas - Kid friendly

I have been searching to find bean recipes that my children will eat. I have been trying to up our fiber intake by adding beans to each meal. These were awesome. I thought I hated Black eyed peas, but these were awesome!

Gingered Black eyed peas

2 cups dried Black eyed peas rinsed and drained
1/2 cup onion chopped
2 strips of bacon chopped
1 tsp deli mustard
1 TBL molasses
3/4 cup honey
tsp powdered ginger
salt and pepper to taste

  1. Put beans in a pot and cover with water. I think I used close to 3 cups of water.
  2. Add all the other ingredients, cover and simmer about an hour, adding water if you need to during the cooking process.

Hmmm, I'm fairly certain that I hate black eyed peas too but since you recommend these and I trust you completely, I will give these a shot. Gulp. There I've said it. Now holy crud, I've not have black eyed peas since I was a kid! I'll let ya know how this goes. :P
